Thank you, Eva Ekeblad!

On Monday, the Google Doodle honored Ekeblad, a Swedish scientist known for discovering that flour and alcohol can be made from potatoes.

The Google Doodle featured a cutting board with potato skins and a mound of flour spelling out the word Google.

"Eva discovered the starch was humble but mighty – potatoes could be ground into flour or distilled into spirits. Her discovery helped reduce famine in years to come," Google said in a statement.

The doodle celebrating Ekeblad's accomplishments falls on what would have been her 293rd birthday.

Ekeblad became the first woman elected to the Royal Swedish Academy of Sciences in 1748, an achievement that would not be awarded to another woman until 203 years later, according to Google.
